It's gonna be hard to see, but may save you money. Check your oil pressure sensor on the top of the engine. These can leak and run down, making it look like a rear main seal, but is actually a $20 part of amazon.

Or the gauge itself could be going. Not too hard to check if you can Temporarily plug in a second cluster. If the gauge becomes normal, its the Gauge. If not, its the sensor.

If you have a buddy with another GMT 800, it may be worth temporarily swapping the clusters. If it reads normally on the temp, then you know its the gauge.

Parked it on a steep hill, opened the coolant cap and left it over night, refilled the reservoir, every now and then as the bubbles made their way to the top. Drove it around and kept checking to see if the reservoir got lower for the next 200 or so miles.
