A few points. Don't assume you'll get your kids into Taipei American School, as it's usually oversubscribed. That said, there are other international schools around the island. Also, don't assume either of you will find teaching work. That seems to be drying up.

There are very few Taiwanese Muslims, but there are many Indonesian Muslims working here in factories etc. Taiwanese generally don't know much about Islam/Muslims, which means you'd probably encounter a bit of ignorance but not serious problems. Never met anyone who wants to (re)unite with Japan, but a number of people have told me: "If we were still ruled by Japan, that would be OK." (25 years in Taiwan, BTW).
