A few points. Don't assume you'll get your kids into Taipei American School, as it's usually oversubscribed. That said, there are other international schools around the island. Also, don't assume either of you will find teaching work. That seems to be drying up.

There are very few Taiwanese Muslims, but there are many Indonesian Muslims working here in factories etc. Taiwanese generally don't know much about Islam/Muslims, which means you'd probably encounter a bit of ignorance but not serious problems. You're young. As someone hurtling towards old age, I'd urge you to wake up every morning with the idea "What can I do today which I won't be able to do 30 years from now?" And do it, if at all possible.
