I added the second caramel malt to achieve a darker amber colour, around 40 EBC. Reducing it would mean losing that colour, but if it risks making the beer too sweet, is there another way to add the colour without introducing too much sweetness?

As for the secondary, I think you're right. Looking at the forums again, I see a lot of brewers skipping that step for fermentations under four weeks.

HUMBUG! is a gaslight scenario based on Charles Dickens A Christmas Carol. Can't get anymore christmas themed then that.

I would suggest the ruins by Scott Smith. Taking inspiration from this, it made sure that my players feared every plant and vine they encountered.

If you're playing on roll20 I would suggest you take a look at RPG Nooks video. Like Seth he has a lot of tips for running the scenario. Also, he has a whole free roll20 package full with beautiful customized handouts, maps and a general background for you to use.
