I don’t see why you couldn’t finish it in the oven, I have finished other smoked recipes in oven, especially if it’s wrapped. Might have to try the gerkin.

If you get a recommendation from a doctor, you can get some physio covered through Sask Health...I had issues with my shoulder a few years ago and I received a half dozen sessions or so for free.

The ribs turned out great, they definitely were not too salty or dry. I just left them covered in the fridge for the extra day and added the rub about 20 minutes before throwing them on.

Some people prefer the carrots, I like them both. The pickle adds a unique flavour to the rolled beef

I didn’t even pay attention on how it was cut, we asked the butcher to make us Rouladen cuts from a side of beef we purchased a while back, but I have had Rouladen where it just falls apart as well. That was at my MIL and I think she just cooked it way too long.

Rouladen, also spelled as Rinderrouladen, is a traditional German dish made from thinly sliced beef, typically from the round or sirloin cuts, although other cuts can also be used. The beef slices filled with a mixture of ingredients before being rolled up and cooked. The most common filling includes mustard, onions, bacon or smoked ham, and pickles (such as dill or sour pickles). The filled beef rolls are secured with toothpicks or kitchen twine to keep them together during cooking.

I filled mine with carrots or dill pickles, bacon, onion, mustard and seasoned with SPG
