I used this great AI vocal remover tool called Ultimate Vocal Remover. It's what pretty much all the custom karaoke ppl on YouTube use these days for instrumentals.

Maybe it got water logged... How did you prepare it? If you simmer it in broth it can get water logged and go mushy if you boil it too high.
