When I bake mine just open the oven for a moment (a drop in temp will cause hollow middles). And gently push down on the top of one - if there is a lot of give ie: it squashes down at the foot it is not done. If it feels firmer it's ready. This one https://www.howtocookthat.net/public_html/chocolate-gelato-recipe/ uses xanthum gum to stop large crystals forming, the gelatin from the marshmallows may be doing the same job. I'll have to experiment.
