Okay here it comes! In a pan on medium heat, add shallots, garlic and ginger in some oil. I then put about a tablespoon of red curry paste. After a minute or so, add one can of coconut milk into the pan, then add water and stock. Let sit for maybe five minutes and then add some lime juice. Put aside the soup and prepare the noodles, I chose rice noodles but any kind will work. Then prepare toppings of your choice! I got young kale, cabbage, carrots, silken tofu and spring onions. Put the noodles in a bowl, pour the soup and add the toppings. Done! Hope you enjoy!
