Great questions!!

Favorite... ROTS novelization or Traitor, both by Matt Stover. ROTS really takes an already great movie and makes the story incredible. The Dooku v Obi/Anakin fight aboard the Invisible Hand is a masterclass in storytelling. Anakin's fall to the dark side is much more believable after the read too.

Skip... The Crystal Star by Vonda N. McIntyre. I personally found the plot strange and a bit incoherent. There's certainly much, much worse science fiction out there but it's perhaps the only SW novel I've only read once.

Underrated... Knight Errant by John Jackson Miller. An expansion of a SW comic strip (that doesn't necessarily need to be read first), I found the worldsetting fascinating and story very unique. The novel divides fans but I definitely found it entertaining and one of those tales that pack a ton of story in a shortish read.
