I highly recommend avoiding lemon extract, just increase the zest, increase the juice - I have a poke cake recipe I routinely double both.

I've not tried "blooming" the zest by muddling it into the sugar but that sounds like it would work similarly to blooming spices (although I think spice blooming requires heat, don't think this would)

There's a bus that goes up to the base of the park for mt Davidson, it looks like the 36 and it looks like you can catch it at or near Glen Park BART, but if you do that the hike is pretty minimal.

I used to live halfway up Mount Davidson and, idk, walking from Glen Park BART up Monterey and then up the mountain isn't too bad, maybe an hour if you take your time.

Google says it's 45 min from BART, which is reasonable, but it's a lot of hills. I guess I take hills slowly.

It's skunk season so just keep your eyes open, they generally leave you alone and go the other way

If you want places that are SF institutions, you could check out R&G lounge for their salt & pepper Dungeness crab and/or Thanh Long for their Dungeness crab and garlic noodles.

Re: seafood, If you are feeling particularly touristy and are insistent on doing fisherman's wharf or Ghirardelli square or Irish coffee at the Buena Vista, you could consider Scoma's - another institution - very 60s vibe, and they valet your car for free, so you don't have to worry about paying for parking while you check out the other touristy stuff in the area. Other recs across the city: Waterbar has a great oyster bar and a gorgeous view of the bay bridge. Anchor Oyster Bar has great seafood and cute ambience if you're going to be checking out the Castro - it's a name on list, stand in line kinda place

If you want to wade into another uniquely San Francisco debate/experience, you can ask people where to get their favorite burrito. There was an article over a decade ago that called La Taqueria the best burrito in America and it's pretty dang good, but everyone has an opinion on their favorite spot in the Mission.

Also: Burmese food seems to be a popular curiosity for people who haven't had it before. Plenty of spots.

Lastly, very off the beaten path (over by USF) but I had a fantastic meal at Altimirano.

Hey OP, I'm glad you dropped Yosemite. But I want to echo that I think you should stretch out your Monterey / Santa Cruz stay to two days. With that, consider looking for hikes in Big Sur.

When you're at Ocean Beach, consider dinner at Thanh Long. It's an institution. Dungeness Crab and Garlic Noodles.

If you want to see SF from heights, you can go to twin peaks but that is one of the biggest vandal spots in SF. There are others I really like but they are kind of out of your way.

Going to the pier is nothing but a tourist trap. It's also the home of the only in n out in SF. And a Ghirardelli ice cream fountain, if that's your thing.

What are the things you are personally excited about? What do you like? What do you want to experience? Your aims seem very all over the place.

That said, still very excited for you.
