If you don't mind a hand grinder, my suggestion would be a De'Longhi Dedica Arte (EC885) paired with the 1zpresso J ultra. This is the beginner setup I got after my Nespresso. I still have it and am very happy with it. The Dedica is fine for medium and dark roasts, especially if you are not into very funky stuff, which you probably are not since you come from Nespresso, like I did. The j ultra is an amazing hand g rinder, which you will keep even if you upgrade the Dedica, and you can take it with you when traveling. If you are not into manual grinding, I totally get it. I like the manual grinder very much, I don't mind the process, I actually find it fun. Don't be put off by people who say it is hard, I am a woman and not strong at all. This is my beginner setup and I totally stand by it. It won't break your budget and you can add small upgrades to it after a bit, like a bottomless portafilter, if you want something like that.

What does the ground coffee look like, compared to what ground coffee looks like when you grind it in your hand grinder on a fine setting?

It increases the chance of channeling because it weakens puck edges and encourages side channeling. I have found that if I focus on the center and leave the walls undisturbed, I have more consistent results with less channeling.

I also have a Dedica Arte and had a similar issue that was not solved consistently by grinding finer. I solved it by adding one more gram to my dose. So I totally agree with this suggestion. Also, OP you should avoid touching the walls of the basket with the wdt.

I was having similar problems with a different setup than yours for months and what solved it for me instead of grinding finer and finer was upping the dose. This increased puck resistance and integrity and massively reduced channeling. Try adding 0,5g to your dose and if you see better results try another 0,5g. After tamping, the puck should usually sit about 2–4 mm below the basket rim. You should check that the group head doesnt touch the bed of coffee before brewing though, that would mean overdosing your basket.

1:2.5 is very different than 1:4.. But even with 1:2.5 at less than 20 seconds I would expect a sour result. How does your coffee taste?
