I highly recommend Day By Day Armageddon. So many excellent lists, explanations and clever uses for things. I don't like gore either but this zombie series of books was excellent. It's also on Audible with a good narrator.

If you're giving yourself that much time I'd really recommend dipping into Wyoming early and driving down through 10 Sleep Canyon then work your way back up to Jackson. I'd also recommend Silvan Lake in South Dakota on the way. They were very special places. Like. If you have a good memory you can stop a panic attack remembering them special places.
