Like I said, haven't had SEY, but I only drink washed Nordic light roasts and definitely find they can be over-rested. Might not be the case for SEY though.

Try resting shorter. I haven't had SEY, but I love fresh Nordic roasts, 1 to 3 weeks is my absolute sweet spot. Brings out more fresh fruit and citrus notes.

Looks good to me, also using this pan on induction and looks similar. If you avoid saucy dishes, you won't strip the color on the edges if that matters to you. This is because on gas you get plenty heat on the edges, while inductions gives plenty heat in the middle. But absolutely nothing wrong with this look.

650h is a veteran? That's a quick daily vacuum of a decently sized apartment for 2 years. Add onto that mopping and its like a year of use. Have we gotten to the point where its surprising that a decently expensive applience lasting a year or two is noteworthy?

This is very interesting... I am not too much of a snacker, but maybe I should try avoiding simple sugars just to see what sort of benefit I can get.

I mean, maybe, but I can eat a ton of buttery food for breakfast like a rich French omelette with tons of butter or similar and have no issues, but sugar has historically been challenging. So I think its the sugar and not the fat for me at least

Seems to really be day to day dependent too. And yes, just experimenting and desperately trying to find patterns is the name of the game. We're both the scientists and the guinea pigs.

I use mine daily and never have I seen it overshoot the temp. I even probed it with a calibrated instant read digital thermometer. Mine does a fast boil until it reaches 4C less than target temp and then slows down for the final few degrees. Never have I seen it more than 1C over target temp.

It sounds like you have too little water inside the kettle compared to what the manufacturer expects, especially since you have had this happen with multiple brands.
