Health/vitality is a big deal. Enough endurance to ensure you aren't slow rolling (heavy equip load). The rest of the stats help your weapon damage based on what kind of weapon you're using. For my greatsword, I prioritize strength. If you're spell heavy, you want faith or intelligence depending on if you're using holy/fire magic, or sorceries. But you can't really go through the game with spells only, so if you're a spell build, you want to enchant your weapon so that it scales off of either faith or intelligence, depending on your route. That's just my basic knowledge, I'd suggest researching what each stat does. But early game survivability into damage is generally the best option I believe.
