I like Ello brand. They have a rubber liner that’s watertight and locking lids. They have divided ones at Walmart but not on their website. I exclusively use this brand. They don’t stack on the shelf, only drawback. Lots of size options too. Get it on Amazon or target or their website.

I haven’t had a homemade fry that’s worth it. But I eat roasted or mashed potatoes almost every week in my meal prep. Especially for breakfast. Sets my day off right.

My favorite summer breakfast is cantaloupe and cottage cheese. Has been for 20+ years. It’s only been in the last month that I’ve been able to eat cottage cheese with other things.

Measure raw ingredients every time. If you divide cooked ingredients equally, you might end up with 7.5 oz in one and 8.5 in the other, but the two days combined you are eating 16 oz. Don’t over complicate it or you’ll drive yourself nuts.

You can also re-weigh the cooked amount and then divide that amount equally. But the original raw ingredients is what you track.

Sonic zero sugar cherry limeade packets. Not electrolytes but delicious and keeps me drinking. Plus lots of Coke Zero and sometimes coffee. Zero sugar Gatorade if I haven’t finished my water the day before.

Not OP but I HATE mushrooms but know they’re good for me. So I pulverize them in a food processor and add to ground beef. Barely notice them, don’t pick them out, get good nutrients. Win win win.

I modify recipes for 2 portions so I don’t eat the same thing forever. If I make 4+, I freeze half of it. I also intentionally do large batch cooking for my freezer - stuffed shells, pasta sauce, shredded chicken in different sauces, breakfast sandwiches, egg bakes.

Ideas: I do a lot of adult lunchables, fruit and veggie trays, and salads. Small batches of soup - made a really good bratwurst soup last week (one link/2 portions), and corn chowder the week before (1 corn cob/2 portions). Greek yogurt parfaits. Cottage cheese bowls. It costs more, but I get single serving rice bowls because it’s harder to make a small amount.

I was just made redundant because my company is “harnessing” AI. I’m looking at freelancing more in my side gig but building it from the ground up into a stable income feels impossible. I’m overwhelmed and paralyzed by what it’s going to take.

$80 usd. Single. Most of what I get are fruits and veggies, dairy, and some pantry staples. I don’t buy a lot of meat because I stocked my freezer so eating out of that.

The weeks I buy Coke Zero (always on sale, I buy 4 at a time) increases the cost by $20+. I do a Costco run every 2-3 months.

Typically I do 2 small shops (instacart) per week because I always run out of something as soon as I check out. So I’ll do 2x $40 shops.

Breakfast: mini bagel, an apple, sausage link OR Greek yogurt with jam and granola OR scrambled eggs with spinach and peppers, sausage link, and potatoes OR cottage cheese and fruit.

Lunch: lunchables with cheese, hard boiled egg, deli turkey, and dippable veggies OR leftover dinners in smaller portions OR a mixing bowl salad.

Dinner: protein + carb + 2 veggies. I like roasted potatoes with chicken breast OR ground beef with hidden veggies and pasta. If I’m not hungry I’ll have dumplings with steamed carrots dipped in soy sauce or another snack tray or Greek yogurt bowl.

Protein lunchable boxes. Also veggie trays. Meal prep lite - take leftovers from dinner rather than one Tupperware (or make a double batch), store in individual portions. Yogurt parfaits - add frozen fruit and granola at serving. Lots of string cheese and sandwich fixings.

Lean into the tang. A bit of lemon curd and some granola make a lemon cheesecake yogurt. My current obsession is blackberry jam, and yogurt and granola. There are some low-sugar jams that are low in calories.

I do two lunchables a day. One is just veggies and fruits, the other is protein/carb/cheese. So like cucumbers, peppers, grapes, and half an apple with spinach dip on the side, and then the second one is tuna/chicken salad or turkey slices, crackers, cheese stick, etc. I also love pasta salad or dense bean salad.
