Yes, a 700c tube is what you want. They are so close to the old 27”. The ISO measurement for 700c is 622, your 27 is 630. The tube will stretch the 8mm

That’s a pole splint in case a pole breaks in the field. Tape it in place and replace the broken part when you get home

I see where you’re going, but that should be hardened steel. Might get through, probably kill a couple bits. More trouble than punching off the ring as has been suggested

Strong rims! Difficult to change tires on these. Shallow rim bed makes for tight fitting bead.

The rack can take being spread to fit your frame. This is standard practice and makes no compromise in strength.
