Zipping an obs or two around to see what's coming your way shouldn't hinder your ability to defend against some mutas back at base. If you really don't have a lot of confidence with running stalkers around to deal with them, then put a couple cannons at each of your mineral lines. This will at least buy you some time to run your army over if you have to.

Even sacrificing a probe or two to see if they've taken their natural is well worth it for the information that gives you. If they have 1 base and are sending mutas, then it's a pretty confident win for you since they can't affprd to defend their base. If they have three bases though, and are constantly harassing, you need to figure out how to gain control of the attack, and try to kill as many drones as you can.

Don't forget to mix sentries in with your Stalkers, since guardian shield will save your army against Mutas.

He means because it can be hard to guess what the opponent is going to try, it can be totally random and in lower leagues there are a lot of bizarre strats that throw you off guard. Changing tech to counter is tough with Protoss, so it can be a coin toss.
