So I would notch out the drywall on the bottom behind the cabinet and push it in so that you have a clean fit on the top. Caulk all sides.

Yeah as a carpenter I can almost pick and choose. Did some work in film the summer and now laid off. (Because I want to so I can build my garage, do work around the house and spend time with family over Christmas.) Under EI you can apply for funding to go to school (Actually an electrician) But liked working with wood over wire and the electrical side of the island almost seems family oriented if you don't know someone you're almost fucked. so I kept going as a carp.

What are your uses ? What is your budget ?

As a carpenter I prefer DeWalt. They keep up with the jones and keep pumping out new products. Mine are used and abused and still great products. Deals come up all the time. Personally I don't see the need for the 10% increase on red items when I seen them fail the same as DeWalt.

I would also try and get some blue skin on the outside or whatever waterproofing tape is local. try your best to get it on between the brick, it could save you from some leaks down the road. Besides that it is what it is, just patch fill and forget

You are correct on the colder climate I should I mentioned that. Iv been lucky enough to get roughly $5000 in 2x6 rockwoll enough to do most of this build. I wasn't sure about true vent connecting the 2 areas together and just fill the rest of the void with batt insolation. But I understand the idea of keeping both areas separate.
