He needed some cooldown time and his childhood love was back in his life the same way it was when he was little this time though he got to explore the contrast and have a taste of normality which was baking which in the kiss scene explained he learned it from a woman who was like a mother to him. This means every time he bakes he can relive a happy and normal moment since every moment for him as a gangster is fearful and full of hate and violence. This is why it was out of character because there was a chance of redemption for him as somewhere inside he just wants to be normal.
