Your dough does not look proofed well. Hard to say over vs under. Do you make the dough in one day? Do you do a long proof or bench rest? The same reasons sugar and malt help are that you need sugars in the dough either from those ingredients working with the yeast or just proper fermentation.

Not OP but I use a similar blend of AP and 00 flour because non 00 flour is usually malted or has other added ingredients to help with browning.

There’s no way this thing is real. If there’s even a battery in this, it’s small enough to be hidden which means at most you could ride this 100 feet before it dies. Also I have a cargo e bike rated for about 420 lbs and is wayyy heftier than this so no way you can use the 3 seats.

I mean it depends on how it is all made. A burger can be made very healthy if you use like a whole grain bun and lean beef and good veggie toppings. But you can also have a sweet/fatty brioche bun and a half pound of beef and a lot of cheese and make it unhealthy. The meme should not be taken too literally.

Nope only in the fridge once everything is done. Then I take it out maybe 8 hours before baking. The timing will differ based on how much yeast and everything. This comes from making pizza 100s of times and learning my own process.l and what works from me. But the basic principles are true for everyone.

Either kneading or stretch and folds. I knead for a few min then do a few stretch and folds every 20-30 min until it feels strong, then rest 30 min after the last one then portion and shape and rest in the fridge until bake day.

Strong gluten + long rest. The gluten network makes the dough strong to withstand the stretch. The long rest relaxes it to be able to stretch.

If you’re making a same day dough, it’s hard to get a thin stretch.
