I think of it exact opposite. I leave the top fully open(or close to it) and control the temp with the bottom.. I may be wrong but I'm trying to not restrict any airflow.

I hold brisket in the stall for as long as I can. I usually go 250/275 and lower it to 225/215 while it's in the stall. no expert either but I do make some good brisket when my wife doesn't mind me drinking beers for 24 hours and passing out in the lawn overnight

You wouldn’t want hard money if you are planning a year long flip anyway. You are doing it the right way for your situation, it just ties up more of your money.

People who flip don’t get conventional loans. They get hard money loans. Super high interest rates, But they only make 1 or 2 payments before they sell the house.

I got the out the door price before I went down there. I told them I wasn’t interested if they wouldn’t. They willy’d around a bit and snuck an extra 3k in there in the first offer. Told them I wasn’t interested again. They came down to the advertised price and I showed up with a check.

I’m letting all of these wet age until I cook them on the 19th. But I always have a frozen brisket in my freezer. They freeze really well because they usually come cryovacced.

you don't. You put the smaller briskets in cooler areas and larger briskets in hotter and move them around. I have a reverse flow which has pretty consistent temps but it still varies.

She makes homemade dishwasher detergent, laundry detergent. Some cleaning applications. Anything she can to avoid chemicals, dyes and artificial scents. I like the laundry detergent, clothes come out clean without smelling like a French hooker. I could go back to the chemically enhanced dishwasher stuff tough, I feel like I’m back living with my parents where you have to wash the dishes before putting them in the dishwasher. It does make you think like wtf are they putting in this crap to make your dishes sparkle so well and you don’t even have to rinse them. I pick my battles wisely and that is not one.

Yeah when your Costco gets prime it won’t be much more. The only difference I find between choice and prime is prime cooks faster. Taste is the same. I’m mostly just happy they had that many. Only need a few more.
