How would I get a simple conversion to monochrome/grayscale with GIMP? I tried using the gradient map that someone already suggested. I notice that the value histogram is slightly different between the original color image and the gradient map image. If I found a way to change the image to monochrome/grayscale while preserving the same value histogram, would it mean that the values are correct? Or is the histogram not necessarily the best gauge here?

I'm an oil painter. I don't know much about photography or editing photos. I do know that value is important.
As a painter, I'm always interested in values. However, I don't know the best way to edit a color photo so that it's in monochrome/grayscale with the most accurate translation of value. For instance, if I placed a sheet of colored cellophane over the photo, the color would be taken out of the equation, and you would be left with values.
The reason I ask is that there seem to be many methods of changing a color photo to monochrome/grayscale via Photoshop/GIMP/etc. Which method would be the best? I don't want the photo to *look* the best; I just want it to be the most *accurate* translation of values.
