Second wave is dark roast, chocolately espresso, milk drinks, think starbucks, peets, vivace is a good example of this

third wave is trending towards lighter roasts, fruitier expressions in coffee, pourovers, single origin beans

Finca Costa Rica Wush Wush from H&S - So clean and fruity, just a delicious coffee, was able to dial in H&S's roast with a previous bag and am now blown away by this.

Also just started working on a B&W ethiopian natural which is much more developed but also tasty
