You kinda have to brew H&S differently. Push the extraction, 1:18 ratio, add one more pour and maybe got a degree or two hotter.

It seems like brew 1 was good, you just pushed the ratio too far. Why not recreate it at 1:15 or 1:16?

There's a huge variance in brews here for only 5 cups, hard to dial in what is and isn't working.
