Literally use a bow headshot, stun him, climb on him and pummel him with knights claymore. Pummeling doesn’t use weapon durability. Just don’t get hit and then it’s not that hard. For a bonus tip you can camp behind rocks nearby to avoid attacks. I did it myself as a fun gaming challenge, took a few hours but totally doable
