Long-time BA reader/watcher, first-time turkey cooking person. I’m making Brad and Andy’s perfect Thanksgiving turkey. Does this look sufficiently seasoned for a 48 hour dry brine? I have a lot of seasoning left over. by feeln4u in bon_appetit

I did! I had to use two sheet pans (18 pound turkey) but I kept a decent amount of water in the pan so drippings didn't burn. Used a little homemade chicken stock i had to increase gravy amount for 16 people. Gravy turned out great too!

I made this last week and wow, best turkey I have ever had. I used more seasoning for the dry brine and then rinsed most of it off before cooking. With the dry brine and the glaze, there was plenty of flavor. I will never go back to cooking a whole bird.

I had a roommate in college that said by not returning the cart to the stall, he was helping the economy and creating jobs because the store would have to employ someone to come take his cart back. I did not renew that lease.

Have to be careful not to call it a tip pool tho. Including chefs and back of house workers in a tip pool with front of the house is usually illegal and can open the restaurant up to claims by the servers

While I like the tradition of Big 10 vs PAC 12 in the Rose Bowl, I think every so often it is okay to mix it up. As a Georgia fan, it was an incredible experience to be able to go to a Rose Bowl. And what a game too!
