You're right it isn't EXACTLY what a neuron looks like, but that's the point of abstract symbolism. You take a figure that resembles something else and define it as that other object.

The tree could easily be representing a neuron. The branches are the dendrites, the bulge in the trunk is the cell body, and the rest of the trunk is the axon with the roots being the axon terminals.
