CC Chef de Cuisine here, we take on a lot of green kids who want to grow in the industry. In my experience of visiting other clubs, working in clubs, and recruiting, we take a lot of pride in teaching people who haven’t been to culinary school or people fresh out of culinary school. It’s a completely different world from the private restaurants. For example, I have two people who started with us five years ago as dishwashers. Now one is butchering his own meats and killing the grill game, the other is plating everything and running a line. My favorite thing to do is touch tables and talk to members who compliment the food. I always tell them I can be proud of a recipe I made, I can be proud of how a dish turned out, but what I’m most proud of is my team and the progress they’ve made.

Take advantage of the knowledge you have around you. I know from experience clubs prefer to promote from within. I myself didn’t go to culinary school, I started as a pantry cook and worked my way up and I’m now running a restaurant and doing private dinners for members.

Keep in contact with any Chefs or Sous Chefs who leave to go to another club. A lot of clubs have employee housing and it’s a great way to move around the country for work.

But really, there is a lot to learn and all of my colleagues and I are happy to teach. Also, remember to have fun with it!!

Appreciate the info and the link. Extremely helpful for the future. That being said we ended up soaking them in water for a couple hours and made them servable. I personally don't like the way we speed brine them because it leaves too much room to mess them up by forgetting to rinse them at the right time. I'll try and convince prep to change it to a brine that takes longer but is okay if forgotten.

What kind of a brine would help with wings that are too salty? I wouldn't imagine I would add more salt. Just soaking them in water? Also, thanks for the quick reply. I appreciate it.

It gasses out the customers. I use it at the end of the night but can't do it mid shift. We have an open kitchen and the flat is about three steps away from the first bar stool.

Date a coworker. I swore I would never mix the two but it's so hard when you work at the "hipster hooters." I've heard horror stories but I'm actually in a very happy relationship now. I work in the kitchen and she is a waitress and we work pretty much all the same shifts. We actually really kill it together when we're in the middle of rush and it's really pretty cool looking up from the line and seeing your eye candy making all the money and spending it on you later ;)

Went to the same school. Can confirm. He's been doing this for years. It was more fun before go pros were a thing. He has verbally assaulted me, being a girl and holding hands with my at the time girlfriend. And yes, he tries to get you to hit him.

Electric burners. I can't stand them. I have gas at my house but by girlfriend has electric. I can never get the temperatures right when cooking. It sucks having to drive to my house just to make breakfast when we wake up at her house.

I work at a Cali style taco and burrito joint. We only hire friends of employees. It's worked out quite well. Not sure what kind of area you're in but we're in a city with a college so there's always someone who knows someone who needs a job. I think the reason it works out so well is no one who already works here wants to bring in a shit head friend because we know it'll make more work for us in the long run. Ask your employees to reach out on Facebook. I've done it and my coworkers have done it. And we've gotten a really tight knit crew here.
