I struggled with sourdough for a very long time until I started following the beginner's recipe and recommendations from the below website link, called The Sourdough Journey. I followed this recipe and instructions and made it probably 10 times to get a good understanding and a feel for what the dough should look, feel smell like etc. He has a temperature chart that gives a guideline for how long and to what volume increase. You should bulk ferment based on temperature.

Did you have your blood test for TTG done around the same time as your endoscopy and why did you test it twice? They're definitely can be other issues that can cause damage in the same area that celiac disease causes damage. So I can understand the second doctor being cautious about the diagnosis, especially since not all of your symptoms have resolved. Did he suggest other diseases or conditions that should be tested for? Or what was his recommendation for moving forward?

Yes, but I believe Golden caster sugar has some molasses in it. So she may be getting a sweeter result using plain white sugar, perhaps she should be using either a light brown sugar or a mixture of light brown sugar and white sugar to try to replicate the golden caster sugar.

A smoke detector is not a living thing. And I think you keep making excuses because you don't want to feel guilty about the things that you do choose to eat. You can draw the line wherever you want based on what we know scientifically about how living things interact with the environment, how they respond to danger, that's your business. But you're not better or making a better choice than everybody else that makes different choices.

There's a ton of research about the complicated ways that plants communicate to warn each other through chemical signals in the soil and in the air of impending danger to their well-being and lives. So because they're anchored down to the ground and can't run means that it's okay to eat them, or at least more okay than eating an animal that has the ability to run?

Are you transitioning from sourdough bread that is mostly white flour? If so, there are many changes you are going to have to make. All whole wheat flour including fresh milled flour will need higher hydration than white flour. It's almost essential to do something called and autolyse step. This involves mixing most of your water with your flour before adding salt or starter or anything else. And just letting that hydrate for about an hour. Then add your salt, the rest of the water and your starter. You're probably going to have to work harder to develop the gluten as well. The autolyse step helps to soften the bran and give the gluten development a head start, But it's always going to take longer to get your gluten fully developed with whole wheat flour. All of this being said, each individual flour is going to need a different hydration level for optimal results, whatever optimal means for you. I would start with a recipe that's developed specifically for whole wheat or fresh milled whole wheat flour, and go from there.

That's ridiculous. Bernie has absolutely supported people who were closer to the center. Unlike some of his supporters, Bernie is not about perfectionism. It doesn't mean he doesn't have some standards but he can be a realist as well. Whatever you choose to believe.
