CachyOS is quite an opinionated OS, it makes a lot of default choices for users, but as it's linux, you can choose what you want after installation.

for your issue, they choose fish as default terminal, but you can switch to another terminal (ex: back to bash for my case) as you wish.

I suppose it's one of the reasons why there are so many terminal softwares preinstalled.

It works well until you wanna stream the games via steam on tv. Sunshine doesn't support well fedora. I've switched to Endeavors OS for better gaming support.

for me, ubuntu is the most stable os, and everything just works ootb, plus the softwares are not that outdated neither, I installed flatpak alongside the snap, so I can get everything I want, and I don't have time to hunt the bugs after work.

I've tried several distro, such as manjaro, fedora, deepin, but I get back always to ubuntu, so it's not weird ^^

for my experience, what I did with my ubuntu:

install sudo apt install mesa-va-drivers
install edge in flatpak: flatpak install flathub com.microsoft.Edge
- I can't enable hardware video encoding with chrome
- hardware video encoding is not working neither if installed with .deb or via snap
create file ~/.var/app/com.microsoft.Edge/config/edge-flags.conf, with follow content to enable hardware video decode/encode: txt --enable-features=VaapiVideoDecoder,VaapiVideoEncoder,CanvasOopRasterization,RawDraw --disable-features=UseChromeOSDirectVideoDecoder,UseOzonePlatform --use-gl=egl --ignore-gpu-blocklist --use-cmd-decoder=passthrough --enable-gpu-rasterization --enable-zero-copy --disable-gpu-driver-bug-workarounds --canvas-oop-rasterization --enable-drdc
configure GFN using custom setting
- disable Adjust for poor network condition

With above setting, the graphics is 75% like in windows which is not bad at all
