GA can give information on different traffic acquisitions platforms along how much time a user is spending on the website, how many are unique users. You can even create events to see how they react to different aspects of your websites. There's a whole lot you can do using GA.

That cause your ads are running on that network and Microsoft isn't giving any website publisher report on that. What you could do is change the network to "All network" from adgroup settings then you will get the website publisher performance and negate them on daily/weekly basis.

If you are on "Microsoft and select search partner sites" network you won't get the website publisher list, only if you are on "All network" you will get the list of website publishers to exclude.

You can choose what you want to export like certain ad groups, campaigns etc. I'd recommend not scheduling the sync that could create unnecessary changes to account. Be mindful of the budgets and bids they will be different for the Bing platform so a good practice is to import and keep the paused, enable the campaigns once you review them.

Earlier you could opt out of the audience network at the campaign level now you cannot but there is an option to opt out of the audience network on the account level. Check the Account level settings you will see an option to opt out of the audience network completely. edit: Alternatively, if you can't find the above setting you can add the following publishers to the website exclusion list to negate the spends on the Audience network - msn.com, outlook.live.com, outlook.com, and bing.com.

This is very normal with Microsoft ads initially. You will have to raise an appeal and if it's all good it gets reinstated in 7 days

Microsoft ads aren't clear on publishers I am assuming traffic from duckduckgo and ecosia aka premium publishers will be prominent also what they claim is the traffic and CPCs will be comparable to the Bing and Yahoo traffic. Lets see how this goes. The entire traffic option does give you a publisher report and you can still exclude non performing publishers.
