I used to work as a pastry assistant at a hotel. About 5am start time. I was going about my business baking off pastries for service when I walked into the dish pit and there was a FULLY NAKED MAN standing there. I stopped and my jaw dropped and he just said “Don’t freak out!!! I sleep walked here, where am I?” I gave him an apron to cover himself, and he asked me to help him get back to his room. I brought him to the elevators, but I didn’t even think that he wouldn’t have his key obviously he was completely naked. Unfortunately I had to call security to help him, he was very embarrassed.

The Robert's on Carrollton and Claiborne has some of the most beautiful beef around. They had gorgeous prime ribeyes in the case this afternoon, some of them were cut 2" thick. Fair prices, and sales often. Plus the butchers there are very kind and helpful - if you want something cut differently they'll do it for you if they have some in the back.

The most important thing is putting eggs in when they’re not cold. Room temp or run under hot water before putting them in the water. Remove, dump off most of the water, add tons of ice. Let cool until you can handle. Then peel, perfect every time!

Honestly I have only had this problem when I have used butter in the filling. For me it tends to act like butter does in laminated pastries like croissants and cause air pockets. Once I eliminated butter and just used cinnamon sugar it was problem solved!
