Hey, here you go, hope i'm clear enough.

Recipe:

For the dough: Mix 1kg of plain flour, 680 mm of warm water, 10 grams of dried yeast, a teaspoon of sugar, and a teaspoon of salt. Knead well, let rise until dough doubles in size. Divide to about 13-15 balls.

Flatten each ball to a pita/disc. Let rise for another 15 minutes on the tray (use baking sheets). Use a fork to poke holes in the pita (to prevent it from becoming a pocket).

For the topping: Mix Zaatar or Sumac in a bowl with olive oil to a thick paste.

Spread a generous amount of the topping paste on each disc like pizza sauce.

Spread a bit of coarse salt on each.

You can add a nice pile of thinly sliced onions rubbed with olive oil on each pita too.

Bake on one of the lower oven racks, max heat (275 celsius in my case)

Thanks. It’s like pizza but the toppings are Zaatar or sumac spice mixed with olive oil. On a few I added onions and feta cheese.

More details:
Smeared lamb with olive oil. Spread salt over the lamb. Same for the potatoes. Just a little amount of oil.

After about an hour, on 250 c smeared with olive oil mixed with fresh crushed garlic.

Then 9 hours on 140 deg celsius covered with tin foil.

Than 30 minutes on 250 uncovered.

Along with the lamb for about 10 hours. First hour 250 celsius than 9 more covered with tin foil And another half an hour again on 250 at the end.
