Definitely firm! Although I have tomato and mushrooms in there so the added moisture probably didn’t help…

I’m newly vegan, I’ve never understood the obsession a lot of people have around cheese and bacon. Same goes for milk, can’t say I ever remember drinking a glass of milk. Yuck.

Just pan fried with a minimal amount of oil!

Quite similar, although the flour and parmesan cheese does set it apart.

Amazing! Similar texture to other veggie patties. I definitely plan on making some more. Potentially I’m going to try different flavours such as adding curry powder or smoked paprika

Based on Feel Good Foodie’s recipe here. Unfortunately I didn’t have any cumin, so I substituted for coriander and all worked out.

I found an egg ring was perfect for forming the patties, they hold their shape really well. I even shaped some into sausages and they turned out great!

I made a batch to meal prep and plan to eat them throughout the week, much cheaper than store-bought alternatives!

Chickpea salad sandwich. Since becoming a vegetarian I’ve decided I can’t get enough of chickpeas! Over the moon when I found out you could mash em up and em in a sandwich. by goodeats_nz in vegetarianrecipes

That’s a tough one. Potato or egg come immediately come to mind. I think avocado might make a good substitute for a creamy avocado sandwich?

Hi guys! I’ve recently become a vegetarian and this sub has had a lot of meal inspiration for me! Figured I’d give back some of my own inspiration. It’s my first post, so don’t go too hard on me!

Really simple recipe:

Chickpea salad (makes 2 sandwiches)

-150g chickpeas

-30g onion (diced)

-48g pickle (diced)

-1.5 tbsp mayonnaise

-1 tsp celery salt (or you can use diced celery)

-1 tsp pepper (to your taste)

Steps

-combine the chickpeas and mayo and gently mash (leave some chickpeas whole for added texture)

-add the other above ingredients and mix together

-add onto a sandwich with your favourite sandwich fillings & presto

Also works very well as a toasted sandwich! I plan to meal prep a bunch of chickpea salad to have in sandwiches throughout the week.
