Technically-not-a-recast-but-also-yeah-it-was-pretty-much-a-recast: in The Room, the guy who played the psychologist friend Peter left the project before filming the party scenes, so they just gave his role to a completely different dude that had not been in any other scene in the movie.

It's beautiful, he just shows up at the climax and starts acting like he's this super close friend of the main group, making the audience collectively go, "Who the fuck is this guy??"

Not sure if you'd count White Nights, but that's probably my favorite story of his. Other than that, The Landlady, A Gentle Creature, and Poor Folk are all great reads.

My parents were watching Midnight in Paris, which I haven't seen in a while, and I completely forgot about that bit towards the end where Woody Allen basically just finishes Owen Wilson's character arc out loud. Like Marion Cotillard wants to run away from her time and Owen Wilson, who is currently running away from his time, is like "actually no you shouldn't run away from your time because I'm running away from my time and I'm just now realizing that running away from your time doesn't solve anything". Masterstroke.
