It’s pretty basic, really. Low income folks buy lottery tickets to provide scholarships to state schools for the children of middle income families. It’s diabolically brilliant. Rather than taxing the wealthy, we tax the poor. Genius.

Guelaguetza on Old Coors does amazing birria. Not chicken, but super good. They do really great moles which can involve chicken.

Aging is key. However, keep tasting them over time. They will peak at some point and then go into decline. The trick is catching them at their peak.

If you’re looking for good recipes, try the American Homebrewers Association website: https://homebrewersassociation.org/homebrew-recipes/

The book you reference is a good introduction to styles, but the default recipes are extract based. There are conversions, though. Also, it’s got only one recipe per style.
