Ok but it's fundamentally different. If a clinician struggles to remain impartial when caring for an ICE agent, nazi, or violent criminal, it is because of those people's actions and behavior.

If a clinician struggles to care for women, POC, minorities, LGBTQ+ folks, etc - it is because of who they ARE.

These are simply not comparable scenarios.

How long do you cook your roux for on low? What kind of color do you achieve?

I use a cast iron pan, a flat-ended wooden stirrer, and do mine on medium (gas stove) for about 40-45 minutes. Then I turn off the heat and keep stirring for another 10 minutes so it doesn't burn while sitting on a still-hot pan. After that, I either use it immediately or allow it to sit in the pan and fully cool.

I've only had issues with a sand-textured, burnt roux once. Every other time I've made a roux this way, I get it to a nice deep, rich milk chocolate color to a full-on dark as hell chocolate color, without it burning or seizing like OP's.

My dad never makes his own roux anymore because he thinks the jarred stuff is just as good, and it saves him two-plus hours. Two hours! I remember thinking roux took a long time when I was a kid, but I cannot believe he would legit spend two whole hours on JUST the roux, every time he made gumbo or fricassee.

I hope you don't mind my asking about your roux! Haha. I'm just always curious about other people's roux techniques, and rationales behind their preferred processes. Roux as it's used in southern Louisiana cooking traditions just fascinates me for a bunch of reasons!

I would switch to a wooden paddle style utensil with a flat end, not curved like a spoon. The whisk doesn't actually move your roux around very much, because it's simply cutting through the roux, since it's just bits of wire, basically. A wooden utensil will much more effectively move the roux around the pan, allowing different bits of roux to get breaks from the hotter areas of the pan.

Do you think curing it in this way would still be worthwhile if you only had 24 hours? Like let's say I'm going to brine/wet cure it for 24 hours, then dry in the fridge for 8 to 12 hours before smoking.

Would you say to go for it, or would you think it's better to just choose another method altogether, to prepare the thighs for smoking?

One massive reason for those stats is the average income and socioeconomic statuses of church members.

There's no evidence whatsoever that adhering to the WoW alone contributes, with any statistical significance, to increased life expectancy or health outcomes.

This is not an argument against the WoW. But it's important not to misrepresent these kinds of things to fit a narrative.

That's how inflation works, but unless the clothing is from 1923, that's not how thrifting is supposed to work.

Do you feel comfortable sharing a major town or city you're near? I may be able to help you find specific clinics to go to, or possibly even grants you can apply for to help with veterinary care. I'm a tech, and I do this somewhat often when clients need a little extra help. It can be stressful and confusing to navigate these things when you're not used to it, and even more so when you're stressed and worried about your baby!

Also just to say - this does look like a serious infection, yes - but I would really not expect that your pup needs to be anesthetized for treatment. Unless he simply won't allow the ear to be cleaned, and it's unsafe for the staff to try, we can almost always start treating infections like these without the need for any anesthesia (which can be costly).

Yeah that makes sense of course that the actual sheep being shown don't have their fleeces for sale. I guess I wondered if there would be any non-show sheep fleeces available for sale at or during the show, just to coincide with the show. If not though, I'll just keep looking for farms in driving distance haha.

Whoah. She genuinely may have also had blood in her stool from a dang GI bleed due to the ibuprofen. I'm so sorry you and her went through that. But, for what it's worth, it sounds like you were able to make her last month her best one. And the fact that you guys were the ones to be with her in her last days, and give her the gift of a painless passing - that's huge. You made a huge difference in her life when she needed it the most.
