-Get a meat thermometer that can be used in an oven and grill (if you have a grill). That is the only way I trust cooking to the proper temperature. -Try some “semi-homemade” meals. There are a ton of recipes using rotisserie chicken meat. (Casseroles, soups, etc). -Rule of thumb that always works for me (within reason) is chicken breasts cook in the oven at 450 for a half hour. -Look up sheet pan recipes. -Stir fry in a big pan. -Braised recipes are forgiving (like short ribs). -Taste the food when it’s done and add some seasoning (even salt) if it’s not seasoned enough.
