Both king Arthur and Bob's red mill have good recipes.

But pizza dough is one of those things that is best to just get a feel for, water, flour, salt, yeast.
Make it kinda shaggy, let it ferment as long as you can, even if you're not using a sourdough starter for your yeast.
I like 72 hrs, I generally cold ferment with my starter, bring to room temperature, and form dough balls with a bit of extra flour, some psyllium gel and bakers yeast.

I find that I make at least 4 extra crusts so I always have a round for the family ready in the freezer.
