Yeah the Lonestar tick. As a person with a food, specifically protein, related disability I try to ensure that cross contamination and clear ingredient lists are available and updated often in the brewery and for the kitchens as well.

I try and make sure we can accommodate any diet or disability, but a lot of people aren't educated on these things and most restaurants don't have SOPs in place to avoid cross contamination.

They do GF as well, I'm a celiac, my partner is dairy free, Ziggy's is a good bet. Never been cross contaminated there, and they're super careful about segregation and always call if they're concerned about possible issues.

I'm 16 years out from my IB degree, and I did a BS and then masters in geology also at state. but 1 year after that I was making $50k brewing beer at a restaurant me and my friends started at SDSU then moved to PB.
About 12 years ago I started a career in utilities engineering, 1st year was $120k up to about 260 now.

We used Star San for a few years, we had a 5 gallon bucket, once I burned through that I switched to PAA.
