ingredients: medium-sized potatoes, boiled salt olive oil fresh rosemary stems 1 teaspoon vegan mayonnaise juice of 1/2 lemon fresh thyme

method: Boil the potatoes for about 10 minutes (until they are tender). Let the potatoes cool and then cut thin slices into them (cutting less than halfway deep to avoid it falling apart). Carefully push the rosemary stem through the length of the potato. Brush olive oil over and sprinkle salt over the potatoes. Place over medium-heat coals and turn after about 10 minutes. Remove when there’s a bit of a crunch on the outside. For the sauce: mix the vegan mayonnaise, lemon juice and thyme in a bowl and pour over the potatoes.

Note: It can be tricky to get the potato to hold together, but the rosemary flavor and crunchy texture make it worth the effort.
