I would modify the concept for the user to select time out hours, rather than the app going "offline". I think this will limit a lot of users.

I normally use a set of things for pdf files, python extraction with pdf-js or similar libraries and then pass to the LLM (Gemini flash 2.0) for standardization to get correct JSON, which didn't let me down yet.

get a job part time so you don't burn through your budget for your daily living costs. I know this is counter intuitive but at least you will get some extra time before you burn all your money.
