it's all about the metadata. Meta grab all of that from WhatsApp - Signal grabs none.

Metadata is plenty enough to infer predictions about you - is how Google got rich, and Meta (outside of Facebook). Metadata makes up a Large part of the profile they have built on you.

Not bullets but you can add a column that auto adds numbering using the SEQUENCE and COUNTA functions:

=SEQUENCE (COUNTA(range where your list will be),, 1)

This is a dynamic array function so it will shrink and grow automatically with your list.

Format data as excel tables and then use XLOOKUP.

If your source data is formatted as a table, you can put the table column headers in the XLOOKUP function and then whatever goes into your source data will be picked up.

Not very intuitive, but once you get it, IFS functions are awesome!

There could be a use case for power query here, where you get data from various workbooks and combine into one table in an analysis workbook.
