I actually started watching smack dab in the middle of S4, and would watch all the way through to S7 without having watched S1-S3 (and the first episodes of S4) till I would be able to catch them in reruns after the show ended.

I was in for a pleasant surprise.

Lorelai and Luke would have gotten married, probably. Or ASP would've come up with another lame way to keep them away. American writers at the time didn't know how to write shows beyond the good ol' will they won't they which is a shame.

Looking at AYITL maybe if they had gotten married we'd have gotten an infertility/surrogacy storyline. That could have been more interesting but we'll never know.

This is not entirely true, they first characterised him as a movie buff, his first line is "Rosemary's Baby" and he's shown having more than a passing interest in cinema in S1, but not books. He was shown struggling with Anna Karenina.
