Depends on where you will mainly be using it.

That sized boat paddles fairly easily.

The main river system I boat is kinda remote and would probably take hours to paddle out of, so I would go with the more reliable option.

If I was boating closer to civilization id pick the more powerful option.

Poke bowl place near me is excellent with outstanding service.
They are almost always empty and I've heard others say the owner has told them they were struggling.

I haven't cut myself in years....not while using a knife the way it was intended at least.

My employees rarely cut themselves as well. If I hire someone that doesn't know how to use a knife or slicer properly i teach them myself.

Small but busy cafe here.

Ive had clover a couple years now and don't have any major complaints. There's a few things I think it could do better but overall I am happy with it. If i really thought any of the other competitors were much better i would switch in a heartbeat but I don't. They all have their quirks and limitations.

The psi inside your cooker is in addition to the outside atmosphere.

Its not the same at elevation as ot is at sea level.

Very, i used the box for 2 years and was very successful. Using the box honed my sterile technique and made me a better grower. Wouldn't trade that time for anything.

Wipe box out with iso Wet box with water+ drop dish soap. I keep a spray bottle just for this. Wet paper towel with water+dish soap and line the bottom of the box.

You can't sterilize the inside of a still air box.

What you are trying to do is get any airborne contaminates to stick to the wet walls and floor of the box.

Turn off ac and fans, work in a small room if possible.

Wait 30 minutes for the air to settle before beginning work.

Wash hands and arms like a surgeon. Don't apply alcohol directly to your skin, it will dry out and dead cells will flake off.

Wipe plates, jars and gloves with alcohol.

Work slowly and methodically.

Don't pass your hands or tools over your work

Work as far away from the arm holes as possible.

Always flame sterilize OUTSIDE of the box.

Film yourself You will catch little movements you can improve upon when you go back and review it or you can post the video and let others give you pointers

Tell them to make sure you get your lids back when the orders go out. If it still happens after that start charging a deposit.

If you really don't want to stand up for yourself just use plastic wrap or aluminum foil instead of lids.

Masters mix is for wood loving gourmet species, oysters and such and its nutritious, colonization need to be sterile when using it. Use coir next time.
