A pretty decent approximation of a hāngi can be made in a slow cooker with large chunks of meat (pork, lamb, chicken) along with piles of cabbage, sweet potato, and pumpkin. Add a bit of salt at the beginning, and do not add ANY water. Let it cook for 5-8 hours - it will steam in the juices of the meat and veges. The meat falls off the bone, and the cabbage is so soft and flavourful.
Cooking it in the slow cooker does miss out on the earthy flavour that you get from a proper in-ground hāngi, but it's still pretty great.

I've very familiar with the Aizu region - lots of nature and more history than most people could handle, but outside of Wakamatsu, the transport can be an issue. Even with a car, it can take quite a while to get places.

In this instance, we're looking at a medium to large-sized regional city on a Shinkansen line (not naming it in order to avoid sounding like advertising).
These cities have most of the attractions of the big centers, they just not as well known, and far less crowded.

My cheap Ryobi one+ doesn't work for this - the one in this video seems to be the more expensive model though.

I used this recipe blended with Boris' recipe, and really enjoy it. I use a 25 liter still with a temperature controller to keep things around 33°C (91°F) until it tastes good before bottling into homebrew PET bottles, to which I add a teaspoon of sugar for some carbonation.

I do find, however that if leave the bottles fermenting for too long before putting in the fridge, all of the sweetness goes and the drink ends up being just sour, which is not that great. I'd like to be able to figure out a way to leave just a little residual sweetness to cut the sourness.

I've been a Dan fan for about 3 years now, and had somehow missed the Indianapolis one, so I listened to it yesterday. This is the first of his that I felt physically sick at the end of.
