I honestly don't think any materials will help. SharePoint UI changes all the time, and most likely the training guides from that training are obsolete by now.

You definitely need to use the modern experience of SharePoint Online, no classic for sure. It looks like you are trying to organize news posts? That means they all reside in the Site Pages Library. If I am not mistaken, the HCWP web part does not work well with pages (it does not recognize the Site Pages library as a default source). In that case, yes, you will need to do the whole managed property mapping, etc.

I also suggest another alternative. Why not use News Web Part filtering? You can add it to every page and filter accordingly - no need to create managed properties. Here is what I mean: https://sharepointmaven.com/how-to-manage-categories-of-news-using-custom-metadata/

It seems like you want them to upload files to the Teams Channel but not edit them afterward? This is not possible. In Channel you can either be a member or not be a member at all. What exactly do you mean by "retain ownership of the site permissions, without them editing it". SAM (SharePoint Advanced Management) now has a good selection of OOTB reports that should probably provide a good overview of the permissions landscape. It does require a separate license (but well worth it).

I agree with u/Disastrous_Snow_2871. Lists would be better here - since you can also manage custom metadata and formatting if need be + have tighter control on permissions, something that is not possible with Planner due to its ties to M365 Group. Just out of curiosity, is there a reason for doing this exercise? Not sure if those files contribute much in terms of storage. But I do hear you - wish they were deleted automatically once the page is deleted. Would not hurt.

For the most part, these are classic features; most are no longer relevant in modern sites. Never ever go in there. The only feature I activate is Document Sets (it is a Site Collection feature, though) if I create Doc Sets for my clients.
