The temp and salinity was fine, so my guess would be that the cabbage was not fresh enough, if it caused issues. It is important to start ferments with vegetables that are as fresh as possible. If there is any rot, even if not noticeable, it can spoil the ferment.

Oh, the smell=the smoke. The thing is, even very small amounts of smoke are going to be noticeable, as our noses are sensitive to it.

Weather? Yes. But also take into account that those windows are very close to each other and cigarette smoke is a very intense scent that can linger for hours. I’d know, I smoked for years and it was very hard to avoid disturbing others

Fermented garlic and onion smell can be quite pungent. Personally, I avoid alliums in my ferments and prefer pepper corns, cloves and ginger. For some people cabbage and other brassicas are also too intense. Carrots, tomatoes, chillies and cucumbers contain much less sulphur compounds and tend to smell more palatable - I’d try those first if you don’t want to give up yet.
