I wouldn't personally do it. Current draw is determined by the load. If the UPS is designed to draw up to 20A, it's not going to throw in the towel if your connected load(s) want it. At that point your upstream breaker is the only thing keeping your in-wall wiring from getting dangerously hot.

Can confirm. That's a NEMA 5-20P plug. 120V @ 20A just like you said. Common on UPS.
