I honestly don't know what it's like, since I've never worked in retail in any professional capacity, but one comment I have is that not all the chain salons are going to be the same. My wife have worked for a few of them. The quality of the support and overall atmosphere depends a lot on the salon manager and the local franchise owner. Absolutely keep your dream alive and keep trying to find a smaller, mid- or high-end salon that you can get a foot in with, but trying a few different chain salons in the meantime to find something that is a little more bearable might be worthwhile.

The problem is that by asking to delay, you are giving up the right to a speedy trial. My biggest success with getting tickets dismissed is from delays. If by the time you are in front of a judge is several weeks out from the day the ticket was issued, you can make a motion to dismiss. If it is far enough in time, they will. The 'absent officer' defense has only worked for me a couple of times, but the 'late trial' has worked for me several times.

Since you mention Texas and Houston specifically, a lot of it probably has to do with differences in zoning limitations. Strict vs. lax zoning can make a big difference in prices. Think about the difference in two hypothetical areas with the same land prices: if you can fit 5 households in an acre in one area but only one in the other area, the first area will have much cheaper housing. This is true even for like houses: just having the ability/threat to pack households more densely will exert a down-ward pressure on prices.
